A great pasta dish starts with fresh ingredients! No compromises!

We make our pasta by hand every day. This gives us complete control over our supply and allows us to reduce food waste by 95%. The flour we use comes from a mill in southern Italy. It is milled using traditional methods to preserve its flavor and nutrients. 

Our products are imported directly from producers in Italy. Our beef, eggs, and poultry are sourced from Belgium. Our deli meats are sourced from Italy.

The advantage of being able to produce our own fresh pasta is that it keeps our food costs relatively low. By carefully selecting our suppliers and maintaining strict control over production, we are able to offer our dishes at reasonable prices, without ever compromising on the quality of our products. Offering an affordable menu is a key goal of the project. In the old Italian tradition, pasta was widely eaten by the very working classes; after all, it’s just flour, water, and eggs. It was therefore unthinkable for us to offer an overpriced menu under the guise of using DOP or local products, which we do use. We offer fair prices ! This commitment also stems from the fact that social inequalities are often reflected in food choices. At Sina, regardless of social background, it will always be possible to eat well at a fair price

An open kitchen—a must-have!

Just like in Italy, the kitchen is the heart of our restaurants. That’s where the magic happens—so why hide it?

In Italy, and especially in the south, the heart of the home is invariably the kitchen. This room has almost mythical status, given how important food is in our culture. It was unthinkable for us to promote transparency about our ingredients and pasta-making processes only to then hide the kitchen from the public. That is why, in all of our existing and future locations, the kitchen is open. This also fosters interaction between the kitchen and the guests; it is not uncommon for the chef to speak with our guests, explaining the origins of a pasta dish, the production of ingredients, cooking techniques, and so on. This interaction is fully in keeping with the atmosphere of our restaurants
